The Cottage Cheese Mix-Up Thread!

So people, how do you eat your cottage cheese? Share ALL your methods here so we can get some new ideas going

My favorite mix-up is cottage cheese with berries. I mash the berries until they have a fine consistency, add a scoop of whey protein and mix it all up. My favorite berries are raspberries, blueberries or strawberries!

I tried this yesterday and it's so goooooooooooooooood. Mix the ChoChee with mandarin oranges or chunky applesauce.

Here is a good and very delicious recipe I found last year. I've been hooked ever since. It's my favorite little evening snack.

* Lightly toast/or nuke a whole wheat pita, just enough to get it warm, not crispy.
* Spread 1/2 cup low fat cottage cheese on the pita bread
* Add 2 tbsp salsa or roast red pepper spread
* On one half or the pita add your favorite lunch meat (veggie * balonga, sliced chicken breast, etc. and some sliced tomato.
* On the other side add some baby spinach and a scrambled whole egg or 2 scrambled egg whites.


Serve on plate with a XL glass of orange juice

I prefer to cut up tomatoes and stir it in with the cottage cheese. I also add some pepper for extra taste.

Cottage cheese pancakes are delicious Here is the how-to..

Ingredients
2-3 beaten eggs
1 cup cottage cheese
Honey or a couple of teaspoons of sugar, to taste (a banana will make it naturally sweeter)
1 cup uncooked oatmeal

Optional, but not necessary ingredients:
banana
a sprinkle of cinnamon
a splash of vanilla

Preparation

Grab your handy blender and dump the ingredients in, in the order they appear (otherwise the mixture will get all chunky). So, eggs in first, then start the blender. As it's blending, pour in the cottage cheese, then the banana if you're using it, then whatever sweeteners and spices you like, then the oatmeal. Once this is nicely blended, cook as you would pancakes, in a nonstick pan over medium-low heat. I love these plain or with fruit, but you can put syrup on them too, just like regular pancakes.

My colleague usually eats cottage cheese on wasa bread with avocado or jam on top. It looked really tasty so I had to try it. Today I ate thin wasa bread with cottage cheese and cranberry jam and it was delicious
